Dhanvantari, paying respect to Sushruta, spoke: "As previously stated, 'Food is the primary source for the strength, complexion, and vitality of living beings. It is related to six tastes, and tastes depend on the substance they are derived from.' Food and its tastes influence the properties, potency, and digestion of substances, affecting the increase or decrease of doshas and their balance. Food is the cause of creation, maintenance, and destruction in the world, including the realms of Brahma and others. Proper diet promotes strength, health, complexion, and sensory perception, while dietary imbalance leads to poor health. Thus, I wish to explain the various effects of different substances, their qualities, potencies, and the actions they perform in relation to their tastes. For the unwise, physicians may not be able to perform their duties properly and manage diseases effectively. Therefore, O Sushruta, the Lord has instructed me to impart the knowledge of the regimen of food and drink."
