Sushruta Samhita
दीप्ताग्नीनां सदा पथ्यः खानिष्कस्तु परं गुरुः । मांसं निरस्थि सुस्विन्नं पुनर्दृषदि पेषितम् ॥३६४॥
Meat that is prepared with a strong fire is always suitable. The best meat is that which is well-cooked, devoid of sinew, and tender, especially when freshly ground.
english translation
जो मांस तेज अग्नि पर पकाया जाता है, वह हमेशा उपयुक्त होता है। सबसे अच्छा मांस वह है जो अच्छी तरह से पकाया गया, नसहीन और मुलायम हो, विशेषकर जब ताजे तौर पर पीसा गया हो।
